Curried Potatoes with Chicken
4 potatoes, cut in small dice
1 onion, minced
1 T. butter
1 t. salt
1 c. chicken broth
1/2 medium lemon, including zest
2 t. curry powder
1/2 t. cayenne pepper (optional or reducible)
1 or 2 c. shredded chicken
2 or 3 c. baby spinach, chopped
Melt butter. Add onion and salt. Saute until onion is very soft. Add potatoes, stirring to coat. Add chicken broth, lemon, curry, and cayenne. Simmer covered over low to medium -ow heat until potatoes are soft. You may need to add 1/2 cup water. Stir in chicken and spinach to heat through. It's great with a green salad, broccoli, and fruit for dessert.
I also found a great way to cook Brussels sprouts and other Cole veggies.
In a bit of olive oil saute a tiny clove of garlic for a minute or so. Add 3 -4 cups prepared veggies. Add the juice of one lemon. Steam until veggies are tender crisp. Drizzle with one teaspoon honey. Season with salt and pepper. Give it a stir and serve.
For the first time in my life, I actually liked Brussels Sprouts.
