Years ago, we used to have a Mexican Fiesta on Christmas Eve. I'm not sure why we got away from it, but today I plan to cook up a Mexican storm. I guess I just want it to be special this year. It is probably our last Christmas with any kids at home. Spencer will be on a mission next year. Jason keeps talking about getting his own place. We aren't doing gifts; nobody really needs anything.
Here's my menu:
Pazole (without the hominy)
Refried Beans
Lime/Cilantro Rice
Homemade salsa
Flat Bread or Tortillas (I can't decide, but it won't be both.)
Shredded lettuce, tomatoes, onions, olives, green peppers, and cheese
Guacamole
Flan
Sugar Cookies-shaped in wedges with little chocolate mice on top (not mex)
Cocoa
Sounds yummy. WE had chili, corn muffins, cheese sticks, and cold slaw. We were a small group. Mom, Kay John, Hall, and Cliff. For desert we had oatmeal cookies. Now that we are older the evening is over early. Everyone left by 8 PM.

Raymond (Ray) is back from Afganistan(?)and is in Phoenix we were able to see him twice. Not long enough but what can you do. He has lots of family to see. Have a great Christmas. We will be at Grandma's. Love to all of you Mom.
