On My Mind...starting a new class today. Vitalistic Herbalism is fascinating.
Delish Kitch...Salmon Couscous and Fruity Spice Cake
1 c. 100% whole wheat couscous
1 small red pepper, chopped finely
1 small carrot, grated coarsely
2 green onions, minced finely
1 clove garlic, minced finely
1 t. olive oil
1/4 c. fresh parsley, minced finely
1 t. dried mint
1 c. flaked salmon
1 lemon, juice and zest
salt, pepper, cayenne to taste
Boil 2 c. water. Measure out couscous. Saute veggies in olive oil. After water boils, add it to the saute pan along with couscous, lemon, salmon, herbs, and spices. Let to pot steam off the heat for 5-10 min. Fluff with a fork. Serve surrounded by fresh, leafy greens~serves 2-4 depending on appetite. Enjoy!
Homemaking...just the usual nest sprucing and loving it.

My week is looking...calm, as I ease back into living in my own (sort of) home again. Routine and order are great comforts.
God has been teaching me...to look on the heart.
Devotions... Some how I got a week ahead with Gospel Doctrine. I'll review lesson 6, read a couple articles from the February Ensign and one from the Conference Report. Old Testament will be Ruth this week. Spanish devotions remain with Polyglot Book of Mormon.
Simple Pleasure...this year's first daffodils.
Commitment to Loveliness...1) picnic dinners with hubby 2) violin- Shubert's Standchen 3) collage of Victorian ladies, drawing from this week's anatomy studies, and daffodils for my journal 4) sew 5) memorize new hymn for February~Have I Done Any Good?
Photo Share...I like to think I'm as lovely and elegant as Audry Hepburn. Of course she was beautiful and tall, but I can pretend. She was such a serene and happy kind of lady and wore simple clothing so gracefully. I would have loved the country she is visiting in this photo.

The Daffodils
I wandered lonely as a cloud
That floats on high o'er vales and hills,
When all at once I saw a crowd,
A host, of golden daffodils;
Beside the lake, beneath the trees,
Fluttering and dancing in the breeze.
Continuous as the stars that shine
And twinkle on the Milky Way,
They stretched in never-ending line
Along the margin of a bay:
Ten thousand saw I at a glance,
Tossing their heads in sprightly dance.
The waves beside them danced, but they
Out-did the sparkling waves in glee:
A Poet could not but be gay,
In such a jocund company:
I gazed--and gazed--but little thought
What wealth the show to me had brought:

In vacant or in pensive mood,

You look great! I haven't scrolled down to the bottom of your page for awhile, and I like all the new pictures. Those treats look so yummy. I wanted to send you a surprise in the mail (by the way, when is your birthday?)... I need to email you for your address. You like pink, right?
