Paradigm Shift

“The list of health problems I think it would very hard to live with is SO much longer than the list of foods I previously thought I couldn’t live without,” Merrill Alley.

nothing new here...journal-#5 February 14-20, 2011

On My Mind...years ago, I watched the movie A Beautiful Mind...painfully we watch my uncle's story unfolding in much the same way...someday we will understand God's perspective...

Celebration...sunny, 65F, only slightly breezy...

Praying For...Princess Gracie, 1st child of daughter #4, and Jason, #1 son...This son and granddaughter are sweet and special; hoping that health, happiness, security, and grace of Jesus Christ come their way. I love these two devotedly. I'm praying for their safety and success and that of the servants of God everywhere. I'm praying for basic comforts for children and families around the world. I'm praying that the hearts of the leaders of nations will be softened towards the Lord's gospel and His children. I'm praying for the Elders of Israel to save the Constitution of the United States and the liberty it demands. I'm praying for peace, hope, faith, and charity to rest on the hearts of mankind...

Family Affair...Emily is enjoying a new house...Heidi finished the family address/birthday list for the greater C family...Sarah is a great asset to our company...Jason is looking forward to a change of address in April...

Commitment to Health...Deliciousness... A couple nights ago, I was going to make my old standby tostada salad, but I forgot to buy romaine at the market. No lettuce was anywhere near ready in my garden either. Soooooo...into my pot of tender, soaked, sprouted, and slow cooked in distilled water until very tender pintos, I put:

1 c. leftover brown rice
a few chopped green onions
6 finely minced shitake mushrooms
1 sliced zucchini
2 c. finely shredded kale
1/4 t. cumin
1/4 t. dried New Mexico chili
my homemade salsa (canned, no-salt diced tomatoes or 3-4 fresh, the juice and zest of 1 lime, 1 serrano pepper, 1 yellow summer squash, 1/2 yellow onion, 1 clove garlic, and a large handful of cilantro coarsely minced in the food processor)

Gently warmed the soup. Add water if it is still too thick. After the kale is wilted, ladle the soup into bowls. Garnished each bowl with 1/4 chopped avocado, a squeeze of lime juice, chopped cilantro, a grind of freshly ground pepper, and nutritional yeast. This ended up bing yummy, spicy Mexican soup. It was very much like tortilla soup without the greasy tortilla chips. Who says salad has to be cold? Tortilla-less Soup

Commitment to Health...Movement...nothing new just sticking with the program M-Sa...

Commitment to Loveliness...nothing new here either.

Commitment to Loveliness...Thimble News...I enjoy designing my own clothing...working on a new dress design-just a simple belted (probably with a scarf made from a little left over silk) cotton jersey sheath that I intend to dye with natural indigo...hoping to get some of this silk for unmentionables...trying to move to all natural fabrics...

Commitment to Modesty...Appearance...same old....am enjoying my thrifted, pink, down vest in this warmer weather...it was brand new with the tags still on....very cute...

Scripture Meditations..."Be still, and know that I am God." Psalm 46:10...He will provide, but patience ans submission are required of me.

Sound of Music...Memorizing  This is My Father's World singing and on the piano....since movement has helped with my stiff neck problem, I think I'll get out my violin and give it a try on that. I love music and the sweet spirit it can bring.

Natural World...Finally started my 2011 nature journal with the theme "This is My Father's World"...while I am certainly not talented at drawing, it is good for my soul...evergreens are good specimens as are birds this time of year...

Towards a Real Education...working on my master's thesis...very fun...

Simple Pleasure...indoor gardening fun...learning to cook all over again...

Garden Gate..I planted all sorts of things this week...the buckwehat greens are growing in trays as before...my new self-watering containers are working wonderfully so far...I'll plant two a week that will hopefully give me about 7 lbs greens within 4-6 weeks...this saves us about $60 per week... the summer garden makes the savings about $150 per week if we don't run off and let it die...I've got all sorts of plans for our edible food forest which is quite deforested at the moment...

Bee Buzz...the girls were flying several times last week in the beautiful weather....

Cottage Dispensary...mixed up another batch of Fountain of Youth blend which will allow me to finish my formulation assignment...I'm making capsules, lozenges, alcohol tincture, and syrup. I don't think I would ever use that formula in any way except tea and capsules, but the assignment requires the others...

What's Coming...nothing on the horizon but routine and order....ahhhh...actually, I plan to spend Monday afternoons at the family history library...

Reading the scriptures and keeping this journal are my delight. I do not keep an online journal to preach to anyone but myself. I like this format, because I can add pictures and correct my writing easier. If you enjoy reading it, I am happy. If you feel offended, please, realize it is not my intention to offend but to teach myself. No negative comments will not be published.
