Celebration...the other morning Gracie started having seizures and stopped breathing...when Sarah realized what was going on, Gracie was purple. SIL gave her CPR to get her going again. She had a second seizure. She was transported to hosp, where she remained unresponsive for several hours. She was transported to a children's hospital in a larger city, where she received a priesthood blessing. She woke up and was sent home. Could have been febrile seizure but doesn't look like it. More tests and MRIs are scheduled. Grateful to not be attending Gracie's funeral right now. God is so good.
Prayers...Cole, oldest child of daughter #1 and oldest grandchild...Lori, oldest daughter...I pray that they feel the love of Jesus and of Grammy, too...MIL that she can be made comfortable and safe...children around the world that they can be safe and happy...
Scripture Meditations..."Is any sick among you? let him call for the elders of the church; and let them pray over him, anointing him with oil in the name of the Lord: And the prayer of faith shall save the sick, and the Lord shall raise him up..." James 5:14-15
Deliciousness...not a big week for eating and hence not a big week for cooking...lots of green smoothies, salads, and fruit, but I did make a fantastic eggplant chickpea curry last night. Monday Mediterranean night I plan to try:
Spicy African Peanut Stew
- 2 c. sprouted, low-heated chickpeas
- 1 sweet potato, cubed
- 1 1/2 t. curry powder (I make my own with cumin seeds, coriander seeds, saffron, ginger, black mustard seeds, and cayenne powder ground in a spice grinder.)
- 3/4 t. garam masala
- 1 t. cumin
- 1 T. minced ginger
- 2 cloves garlic
- 4 diced tomatoes
- 1 can light coconut milk
- 2 c. onion broth
- 2 T. natural peanut butter
- 1/2 c. red quinoa, sprouted
- 1/2 c. nutritional yeast
- 1 lb. kale (reserved)
Put it all in the crock pot on low for a few hours. I like my crock pot fitted with a dimmer switch so I can cook things without killing the enzymes. Of course I cook things conventionally too. This could be cooked on top of the stove for about an hour at a simmer. Stem and chop kale; add it for the last 10 minutes of cooking. Garnish with cilantro and chopped raw peanuts.

Reading the scriptures and keeping this journal are my delight. I do not keep an online journal to preach to anyone but myself. I like this format, because I can add pictures and correct my writing easier. If you enjoy reading it, I am happy. If you feel offended, please, realize it is not my intention to offend but to teach myself. No negative comments will not be published.
