
It's really brought home how delicate his health is. He's feverish, covered with a rash, and just generally run down. I'm rather put out.
We contacted the head chef before signing him up for the cafeteria plan. He has a severe corn allergy and needs a special diet. They assured me that they could accommodate him. Spencer's diet for the last three months has been white pasta with a couple different sauces containing zero protein, Grape Nuts, 2% milk, and a salad bar with anemic fruits and iceberg lettuce. Lately he can't gag much of it down.
This weekend I'm trying to devise a few meals he can make in the dorm's basement kitchenette with canned chicken or tuna. Certainly, he can make tuna or chicken salad and fake out sushi with tuna. I'll send some canned fruits and veggies from our storage, too. If any of you have any ideas, that don't include corn, please, help.
Pasta with Spicy White Tuna Sauce
1T. Olive Oil
1t. onion powder
1 cans tuna
1/2 t. garlic powder
hot pepper flakes to taste
1/2 c. chicken broth
2 t. dry parsley1T. Butter
1/2 lb whole grain pasta
Drain tuna. Heat oil and butter.Add onions and cook until golden. Add anchovies and garlic, stir for 1 min. Add tuna and stir well.Add broth and cook until almost reduced. Add parsley and season with salt and chili pepper. Stir butter into sauce and turn off heat. Cook pasta and reserve 1/2 c. cooking water. Add it to the sauce and turn heat to medium. Drain pasta. Add sauce and toss well.
Pasta Fagolli
1 can white beans
2 c. chicken broth
2 T. olive oil
2 T. tomato paste
1/2 t. garlic powder
1 t. onion powder
1 stalk celery with leaves, minced
1 carrot, sliced
1 t. dried rosemary
½ t. salt
freshly ground black pepper
8 oz. whole wheat pasta
Sauté veggies in olive oil until soft. Add tomato paste and sauté for five more minutes. Add broth, beans, salt, pepper, and rosemary.Simmer for 20 min. Meanwhile, boil pasta according to package. Mix it into the sauce.
Chili Mac
2 cans pinto beans
1t. onion powder
1/2 t. garlic
1 carrot, sliced
1 stalks of celery, chopped
1 bell pepper, chopped
1 can green chilis
1 t. olive oil
1 t. chili powder
8 oz. whole wheat elbow mac, cooked
In a large pot, place cooked beans, seasonings, and sautéed veggies. Cook on low heat for 30 min. 5 min. before the end of the cooking time, add pasta.
Chicken Goulash
1 can chicken
1 T. paprika
½ t. salt
¼ t. pepper
1 t onion powder
1/2 t. garlic powder
1/2 cup chicken broth
1 T. tomato paste
Heat everything together and serve over brown rice.
Shredded Chicken BBQ
1 can chicken
bbq sauce
whole wheat buns
heat and serve
Ginger, My son Grey had severe corn allergies too! I like your idea with Tuna! I have two other suggestions. Buy him a blender and try "green smoothies!" They have increased the health of our family by amazing amounts!! Here is a video on how to make it: www.youtube.com/watch?v=exr8-jru1ke. Or if that link doesn't work google "green smoothie girl." My girls like them as the recipe is, but I regularly double the frozen blueberries or bananas to get a sweeter taste! With Spencer's weightloss issue, try adding an avocado to the shake. It makes it very smooth and yummy and the extra calories from the good oils it contains will help his skin too! I would also suggest getting him a rice cooker. He can plug that in his dorm room and have brown rice with a can of beans when ever he'd like. Have you asked BYU about moving him to Heritage Halls? They have kitchens. (I have a blender he can have if he decides he likes the green smoothies!)
ReplyDeleteI too was thinking rice cooker. He can stick veggies in it, cook it with chicken broth, etc. He can also cook other grains too.
ReplyDeleteThanks. I bought him a rice cooker on Saturday. I sent bags and bags of cans, spices, wheat pasta, and brown rice from our storage. His sister is going to bring him parishables today, like butter and cheese. He'll have to come home this fall to regain his health. I'm so upset over this.
