We've been eating these chicken enchiladas all my life. Well actually my mother made them all cheese. Sometimes I make my sauce from scratch and sometimes I use a can of El Pato sauce. They are so easy. They're one of my go to meals, when I'm beat or have no motivation. It's so weird that on shopping days I do not want to cook.
Soften corn tortillas in a bit of hot oil or use whole wheat tortillas. 1 or 2 per person
Saute 1 small onion in the pan you softened the tortillas in. Add a small can of green chilies and some shredded chicken. Roll the tortillas around a couple tablespoons of the chicken filling and lay in a baking pan. Pour sauce over the top. Sprinkle with cheese and bake at 350F for 15 min.
