delicious...sniff
I forgot to take pictures. The one above was lifted from another site. Mind didn't look like this. The pot was empty before I knew it. Anyway it's not pretty but oh, so delicious.
I made Ratatouille and Whole Wheat French Bread for dinner. As usual we had some of Spencer's friend here to eat. More than I expected so...sniff...the servings were smaller than I would have liked...I only got a couple pieces of bread and a small bowl of...sniff...Ratatouille. You've gotta try this stuff. It serves four adults nicely--six in a pinch. It's the ultimate peasant food and would be good with the addition of small white beans.
1 large onion, sliced thinly
1/4 t. salt
1 t. olive oil
1 red pepper, chopped
3-4 cloves garlic, pressed
1 green pepper, chopped
1-2 lbs. egg plant, sliced and cut into spoon sized pieces
2-3 zucchini, sliced into thick coins
2-3 butter stick squash, sliced into thick coins
2-4 tomatoes, chopped (might be canned if yours are not ready yet)
1 c. fresh parsley, minced
1 T. fresh thyme
1/2 c. basil minced
1. Put eggplant in a strainer and salt with 1 T. salt. Let drain for 20-30 min and rinse.
2. Meanwhile, caramelize onion over very low heat in oil and salt with pot covered for 20-30 min.
3. Add veggies, parsley, and thyme.
4. Simmer over low heat for 15-30 min until it is soft but not mushy.
5. Correct salt to taste. Top liberally with freshly ground pepper.
6. Serve with homemade French bread or homemade pasta (whole wheat of course, sprouted if you can.)
