Celebrate
My latest fever only lasted 24 hours. I'll be so glad, when my body is done cleansing and rebuilding. But at least it is cleansing and rebuilding....

Keeping a Home
Pantry Principle area1...I'm not sure why people in this city put indoor/outdoor carpet on the front steps, but that's what we have. It's hideous. I wish I knew how to lay tile....then it would be 6 inch terracotta tiles...since I can't and it's not, I need to clean up the front (dead) door yard garden and lovely blue carpet...

Deliciousness 
No-Pasta Veggie Lasagna from Eat for Health....I think my life is complete...everyone loved it...each serving is less than 250 calories and loaded with vitamins, minerals, protein, and fiber...of course I changed it like I do all recipes, therefore I write it here so as not to forget. I love his salad dressings, too

Delectable Veggie Lasagna
2 smallish regular eggplants or 4 Japanese, sliced thinly, salted, and set to drain for 20-30 min, then rinsed
2 medium zucchini, sliced thinly with a potato peeler
2 medium yellow squash, sliced thinly with a potato peeler
1 pkg. firm silken tofu
1 small onion, 
4 cloves garlic
1 c. fresh basil leaves
1 pkg. firm tofu, pressed
2 t. dried Italian herbs
1 c.  tofu mozzarella, grated
2  lbs. tomatoes, diced
1 small onion, chopped
1 c. chopped parsley
1 c. chopped celery
1 t. dried Italian herbs
4 c. mushrooms, sliced
4 large red bell peppers
8 oz. lamb's quarters or kale, finely chopped


Start eggplant salting and draining. Press firm tofu to drain. Dry saute chopped onion, celery, and sliced mushrooms in a large sauce pan for 20-30 min. Add tomatoes, parsley, and 1 t. dried herbs. Simmer until tomatoes breakdown and make a sauce.  Meanwhile, heat peppers over low heat until very soft. Add greens until wilted. Process in blender until a thick sauce but still slightly chunky. Preheat oven to 350F. Puree silken tofu, onion, and garlic in a blender. Add basil and pulse until basil is coarsely chopped. Crumble firm pressed tofu and mix with grated mozzarella.  Mix in silken puree. Layer tomato sauce, eggplant, red pepper sauce, 1/3 of the tofu cheese, squash, and tomato sauce. Repeat, topping with final 1/3 of the tofu cheese. Bake uncovered for 60 min. Let rest 5 min. before cutting. Serves 8 with a large green salad and/or steamed broccoli/cauliflower on the side.

Toward Real Education 
having so much fun mentoring young people...I can't wait to see what my students glean from their reading this week. I learn so much each time I teach a new bunch of youth... adding Nutritional Education Trainer to my list of educational pursuits. I don't know where all my studies will finally lead, but they're invigorating!

Toward Rhythm and Beauty
made pressings of several herbs for a School of Natural Healing class...walking a lot more again...loving how the red rock plays its color against the stormy gray skies... Jennifer is going to teach me watercolor. I'm finally going to learn the beautiful art--mine may not look like art though.

I found an extractor that I may be able to afford. Hurrah!

Garden Gate
The tomatoes are whimpy this year, but we are getting tons of peppers, basil,  parsley, sage, summer squash, pumpkins, sunflowers, cucumbers, and eggplant.

Biblo Fix  
I'd like to say I'm enjoying Herodotus this time through, but it's still a yawn. I've heard about the Landmark Herodotus, an edition with tons of maps and a fantastic translation. With luck, these claims are true.  I plan to get a copy, since I really must read this book with some comprehension. Update to come...

Praying For
This week our grandone of the week is Old King Cole, our oldest grand son.  Look at those eyes! He's a great gentleman, a merry soul, and always kind to his little sisters. Since he'll be going off to kindergarten this year, I pray that he will be safe, happy, healthy, and be blessed with a loving, competent teacher. I pray that his parents will take care in raising this precious spirit. I pray that the world will be a safe place for him and the people he meets, as he goes out into a bigger world, will be good and kind. I pray that children all over the world will be as loved and blessed as he is.

Images From My Life
I planted these sweet peas by dumping out the package a few years back...they come back every year in a part of the yard I lovingly call the jungle. Depending on the time of year, it's thick with sweet peas, columbine, daisies, pinks, lavender, salvia, ivy, iris, and even a few weeds.  It's naturalization-don't you know?

 Commitment to Loveliness
maybe we'll get our leak fixed so we can fill in the awful hole in our yard...my heart's just not into tending this place, since we don't intend to stay...nice people but horrible climate...oh, that sounds so dreadfully negative.....we're here for now and bloom where we've been planted...just like the sweet peas.
