On My Mind...trusting that God will bless His children really works.

Celebration...deliverance

Praying For...Sons and daughters of God that serve Him in dangerous places. the leaders of nations that their hearts will be softened and they will desire to do right. Quinn our court jester... he's a funny, happy boy and almost two. My pictures of him are much too old to use now. I pray for his protection and health and the same for all children of the earth. Praying for peace. Praying for our soon to be missionary.

Homemaking...happy to be a homemaker...I love my job.

Our Sabbath meal will be another Eat to Live inspired recipe this week. Probably, not many people crave beans like I do. I know it's odd, but I've always felt more well fed after eating a plate of beans than anything else. Paring beans with mushrooms and greens is the absolute best.

Black Forest Mushroom and Bean Soup
1/2 cup dried mixed mushrooms (optional)
2 pounds mixed fresh mushrooms (button, shitake, cremini), sliced 1/4" thick
4 cloves garlic, minced or pressed
3/4 t. thyme
1/4 t. savory
1/4 t. basil
1/4 t. fennel
5 carrots, coarsely chopped
2 c. cauliflower florets, cut into small pieces
2 c. chopped organic celery
3 leeks, minced in food processor
1 onion, pureed
8 c. water
1 T. lemon juice
1 T. chopped fresh thyme
2 t. chopped fresh rosemary (I don't like dried rosemary at all.)
4 c. cooked white beans (navy, great northern, etc.)
8 oz. organic spinach or kale
1/4 c. chopped fresh parsley

If using dried mushrooms, soak them in hot water to cover for 30 minutes and cut in pieces. Heat 1/8 cup water in large saute pan. Water sauté the fresh and dried mushrooms, garlic and dried herbs until tender and fragrant. Set aside. In large soup pot, bring water, carrots, cauliflower, celery, leeks and onion to a boil. Reduce heat and simmer until vegetables are tender, about 30 minutes. Add lemon juice, fresh herbs, mushrooms, beans, and spinach. Heat until spinach is wilted. Serve garnished with fresh chopped parsley.
