Super Mom Saves the Day

Our Relief Society presidency has a hard time getting together for presidency meetings. One member is a nurse, whose schedule is unpredictable. One member is trying to sell her cabin and is always up the mountain. Another's husband is a bishop of one of the college wards, making everything in their life a little too busy. Then there's me, the world traveler.

Anyway, yesterday the pres was finally able to get us all together at a moment's notice. I got home at 6:05 with no dinner ready at all. In the past, we would have gotten a pizza or gone to some restaurant. But with Spencer's food allergy, those days are behind us. I was not thrilled about starting pork chops at that late hour; I sat there and thought. Light bulb!!!!!

I had a dish of rice in the fridge along with some miscellaneous veggies, eggs, and cooked chicken.
In ten minutes, we had delicious fried rice that was way better, more nutritious, and much faster than any we could get in a Chinese place for pennies on the dollar.

Quicky Fried Rice
4 c. cold brown rice (You need aobut 1 cup cooked rice per person.)
4 c. cut up veggies (Again, 1 cup per person. I used a red pepper, mushrooms, green onion, cabbage, and cilantro, but nearly any veggie will do.)
4 eggs (Again one per person)
1/2 c. cooked meat ( This is optional.)
soy sauce
red pepper flakes
ginger
sesame oil
olive oil

I started by browning the mushrooms in a bit of olive oil, because we like them better browned. I took them out of the pan. Then I mixed up the eggs, pouring them into the hot pan. I turned off the heat and put a lid on them so they could set. I turned them over onto a plate and added a bit more oil and the veggies--green onions first. On top of that, I put the rice. Next I sprinkled soy, peppers, ginger and sesame. While the veggies and rice began to warm, I cut the eggs into thin strips with a pizza cutter. Once the whole thing was steaming, I began to turn it just like I was folding egg whites into a batter until well mixed. I returned the egg and mushrooms to the pan until piping hot.

This fed four hungry adults.
