pink dress and new traditions....journal April 18-24, 2011

On My Mind...sacrifice, atonement, resurrection...

Celebration...family for holidays

Prayers...Oakley 2nd child of daughter #1...Jarrod spouse of daughter #2...that they come to know Jesus as a kind loving friend...safety and happiness for children all over the world...and my MIL that she can be happy in her new home...

Deliciousness...new Easter tradition, nutritarian taco bar-Garbanzo taco filling, seasoned, mashed pinto beans, jicama tortillas (and corn and flour for the SAD crowd), green salad with tofu/cilantro dressing, pico de gallo, salsa fresca, melon and berry salad, and mango sorbet... (I got some shredded beef for the SAD crowd.)

 Garbanzo Taco Filling

2 c. cooked garbanzo beans
1 t. cumin
2 t. ancho powdered chilies
1 t.  garlic powder
1 t. onion powder

Toss, crush slightly, and bake at 350F for 10-15 min.

Tofu/Cilantro Dressing

5 oz. low-fat silken tofu
1 T. cashew butter
1 clove garlic, crushed
1/4 c. green onions
2 T. lemon or lime juice
2 T. apple cider vinegar
2 t. Italian seasoning
3 T. fresh cilantro
1 t. fresh dill
1 T. Bragg's Liquid Aminos
1 t. cayenne

Whir in magic bullet until smooth

Commitment to Modesty...Joseph bought me a beautiful pink dress for Easter on his way through Pendleton, Oregon. I got some white sandals at Payless that look stunning with it...

Cottage Dispensary...Cayenne zapped the migraine I had for three days. Now why did I suffer, when I knew cayenne would fix it...since I began my sojourn into herbalism, I've felt more and more that herbs should be incorporated into our food...Hippocrates said let your food be your medicine and I concur...So I'm taking a short class on culinary herbalism...exciting stuff...
