Lentil Dal with Greens
3/4 c. French lentils
1/4 c. red rice
2 cloves garlic
1 piece of ginger about the size of a woman's thumb, julienned
3 or 5 green onions or 2 spring onions from the garden, sliced
1 T. my own curry blend (cayenne, cumin seeds, black mustard seeds, fennel seeds, coriander seeds, cardamom seeds, cinnamon, cloves, saffron, fenugreek seeds, and turmeric (found one that doesn't taste like comet)
three broccoli stems, peeled, sliced, and quartered (don't throw out this nutritious part after you eat the flowerets; they adds nice texture and bulk to soups and stir fries)
2-4 c. chopped kale
several cups of water
1 Rapunzel no salt veggie bouillon cube
I like to soak the lentils for 12-24 hours and low heat them. But if you forget to plan ahead like I did today, cover lentils with water plus about an inch. Bring the lentils to a boil. Turn down the heat and add rice, onions, ginger, garlic, and Rapunzel. Simmer on low for 50 min. Add broccoli stems, turning up the heat to medium for 5 min. Add kale, continue cooking for 5 min. Garnish this with nutritional yeast, dulse, freshly ground black pepper, and Asian pepper paste. Sliced tomatoes and a fruit salad of oranges and bananas are good sides. Delicious! Nutritious! Filling! Satisfying!

Thimble News...I dream of sitting down and sewing new things. Hopefully, I'll be home long enough to do so. If not, I may take up sewing by hand again. I'm in desperate need of a couple new skirts.
Towards a Real Education...reading The Joys of Living by Orison Swett Marden...although his ideas have been my mantra for years, I slipped back into old ways this winter. Nice...Very positive read. Re-reading all the assignments for my scholars this week to make a meaningful term final.
Sound of Music...violin is my solace...memories of singing hymns to my MIL on the day of her death will be sweet to me always...
Natural World...the sound of the ocean is sweet music to sleep by...
Garden Gate...my squares are alive still with kale, bok choi, collards, onions, and parsley...garlic is thriving under the espalier apples in front....planted purchased tomato, pepper, eggplant, and basil starts...the garden will be small this year, since I missed the spring planting window and all my starts died from neglect...
Happy Homemaking...there's no place like home...
