Pantry Diving and Thriving

I'm the new preparedness specialist in my ward (congregation.) I love this sort of thing. The first request of the Relief Society is 72-hour kits. The typical kit has very little to eat and very little that anyone would want to eat. It is mostly white flour, sugar, salt, and chemicals masquerading as food. So many people can't eat gluten, sugar, and such, making this sort of plan not feasible. Because I intent to thrive instead of survive in unusual circumstances, I've searched and searched for an answer and found Vegan Unplugged. In VU are plans for this very goal with a 5 day meal box.



I realize most people eat meat, however, the recipes seem tasty enough for anyone. And if someone absolutely must have their meat, they can replace some of the canned beans with canned chicken or beef. Of course I still think it is a good idea to find things for a kit in a backpack that aren't just chemicals, sugar, and salt. However, this idea is a great supplement if leaving home can be done in a car. Also it is a wonderful thing to have on hand for blackouts and other disruptions in utilities, where a family can stay put.

I went through this with 5 little children after the Clinton Inaugural Day Storm, when we had no electricity for 5 days. We were totally unprepared but it turned out to be a wonderful time with my children. We all slept in the living room around the fireplace. I cooked soup on the fire (and ruined my pans.) We played board games, pieced puzzles, talked, and went to bed early. It was grand, but I learned a lot about what it would take to thrive in this sort of situation.

Ever since the movie Julie to Julia, I've wanted to go through a cookbook day by day. I intend to do just that and report on my successes and failures over at my Kate's Kitchen Blog. At the end, I'll post a menu and shopping list for a 5 day meal box that will feed 2-4 adults. Of course, since I have most of the ingredients, I'll substitute fresh for canned. I'll cook with my sun oven on sunny days and a combo of a portable gas cooker and thermal cooker on cloudy days.
